Dry Ingredients:
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
Liquid Ingredients:
1 cup pure maple syrup
2/3 cup soft silken tofu
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup of mixed berries (fresh or frozen/defrosted)
Makes 12 muffins
1. Preheat oven to 350˚F. Mist 12 muffin cups with nonstick cooking spray oil.
2. Sift the dry ingredients into a large bowl. Combine the liquid ingredients in a blender and process until smooth. Pour the liquid ingredients into the dry ingredients and stir just enough to combine; do not overmix. Stir in the mixed berries.
3. Spoon the batter into the prepared muffin cups and bake for 20 minutes or until a toothpick inserted into the middle of a muffin comes out dry. Let cool for 10 minutes before releasing the muffins from the cups.
